Butter production can only be estimated approximately as the main source of butter is land-based; 25 litres of milk for the production of 1 kg of butter are allocated in view of the high content of petts. The consumption of cheese (whole milk and skimmed milk cheese) is slightly lower per head of the population in the Protectorate as well as the consumption of butter than in Reich. A foreign dependence on the supply of milk and dairy products does not exist in the protectorate, at least not directly, i.e. in the form of milk, butter and cheese. On the other hand, the local milk production, as in Germany, is partly based on imported oil cakes. Overall, it can be said that 37 kg of oil cakes were available per cow per year in the pro tectorate and in the Sudetenland against about 1 20 kg per cow and year in Germany (see Table 36 below). In this calculation it was assumed that all the oil fruits imported into the former Czechoslovak Republic or the oil cakes obtained from it were consumed in the territory of the Historical Countries. In addition to the production of cow's milk, the supply of goat's' milk plays an important role in the Protectorate. The seizure can be estimated at about 26 kg per head of population. On the other hand, the production of sheep's milk, which can only be estimated roughly, is extremely low with O,l kg per head, so that this quantity can be practically reduced. See Table 26 Fats of food Taking into account the cattle's tallow, the area's own fat production is 85 000 t = 12 kg per capita in the protectorate and 43 000 t= ll,6 kg per Head in the Sudetenland. However, as can still be seen, this local fat production is not a significant one.
